VEGETARIAN!
Well, I don’t know if I really am, but I am trying it, dating it…. (a friend of mine recently said she is dating vegetarianism, not marrying it).
It started January 4th and my incredible meat-eating husband is joining me in this endeavor for the month!
He wants a cheeseburger.
I’m doing well with it actually and really enjoying how I feel and the fact that I have lost 6 pounds which is just an added bonus to how good I feel.
For the last couple years I have been reading some really eye opening, enlightening, disturbing books like,
And they are changing my life and how I view food.
I’m here to tell you though that it is really hard to get on board with what’s going on in the corporate food conglomerates and the entire notion of “fighting” what’s going on and not just joining in and mindlessly eating.
This is about conscious eating.

I have been in a coma with my eating for so long.
But now I am awake!
Being conscious of the way you eat means knowing where your food is coming from, paying attention to how much you are putting into your mouth and then understanding how you feel about what you just ate.
If you are interested at all in learning where you food comes from and waking up to the fact that we put a lot of crap in our bodies – read one of these books that I mentioned above – they will change your life.
They will wake you up.
Being a vegetarian is really not that hard and if you like to cook – it does give you a whole new set of recipes and experiments to try.
I don’t like tofu, but I recently made some amazing tofu/black bean tacos with homemade salsa verde. Try it!
1 pkg extra firm tofu
cumin, chili powder, salt and pepper – all to taste
1 can black beans, drained and rinsed
1 onion, chopped
1 garlic clove
5 tomatillos
1 pablano pepper, chopped
the juice of one lime
Salt and Pepper to taste
1 tablespoon Agave Nectar – or more to taste
1/2 bunch of cilantro chopped
Saute the onion and garlic in a little EVOO. When the onions are soft, add the husked, washed and cut tamatillos into the pan along with your pablano pepper and saute until nice and soft. Add the lime juice, salt and pepper and agave nectar and begin mashing with a potato masher. If the mixture is too thick or dry, add a little vegetable broth as you mash – you want a very chunky salsa texture.
In the meantime, mash the tofu up with the spices and set aside. Heat a pan over medium heat with some more EVOO. Add the tofu mixture and stir fry it in a pan just as if you would your meat for making tacos. Once it is nicely browned and fragrant, add the black beans and heat through.
Assemble tacos with corn tortillas, shredded cabbage, shredded cheese, tofu/bean mixture and your warm salsa verde.
These will make you forget all about the meat!

I lost weight too, but didn’t have any to spare; part of why I stopped.
